On SundayS = generally on Sunday.

Every Sunday = each Sunday that occurs. All of them.

On Sunday, I will go to Kyoto [once]
On Sundays, I go to the market [implies: usually]
Every Sunday, I visit my mother [implies: all, or nearly all, Sundays].
